Cedar Lake Tamale Pie
Recipe for one serving. Multiply as needed.Ingredients:
- 1/2 cup cornmeal
- 1 package teapot soups "Black Beans and Rice" or other instant chili
- 1 t chili powder
- 1/4 cup Just Corn-brand dried corn
- 1/8 t garlic powder
- 1/4 cup chopped sun-dried tomatoes
- 1 t dried chopped olives
Instructions: Place cornmeal in ziplock bag. Combine remaining ingredients in another ziplock bag. Backcountry Preparation: Boil 1.5 cups water, add all ingredients except cornmeal. Simmer for 5 or 10 minutes. Remove from heat, add cornmeal, and let sit for 10 minutes. *Adapted from "Lipsmackin' Vegetarian Backpackin'"
