Preheat oven to 350Combine in mixing bowl and beat well:
3/4 cup cooked oatmeal
1/2 cup honey
1/2 cup olive oil
1/2 cup grated apple
2 cups raw, grated zucchini
1 tablespoon vanilla
Sift together:
3 cups whole-wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
Stir wet and dry ingredients together until blended.
Pour into two greased greased 8" bread pans. Bake 55 minutes at 350 degrees. Remove from pans and cool on rack.
