Matthew’s Pumpkin Cookies

Ingredients
1 and 1/2 cups blended raw pumpkin
1/4 cup water
1/2 cup Olive Oil
1 cup (or less) honey
1 tablespoon ground flax seed or flax seed meal
1 cup coarsely cut-up pecans (or broken almonds)
1 cup rolled oats
2 cups whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon

Instructions
Blend raw pumpkin and water together in blender. Mix pumpkin with all the wet ingredients and stir in ground flax seeds, nuts, and oats. Sift dry ingredients together, and then mix wet and dry ingredients together.

Drop by spoonfuls onto greased baking sheets. Bake at 350 degrees for 8 – 10 minutes. Place cookies on rack to cool. Makes about 4 and 1/2 dozen.
