Lentil Loaf
Ingredients 1 lb lentils, cooked 2c spaghetti sauce, or tomato sauce 1/2c onion, diced 1/2c celery, minced 2 tsp sea salt 1 clove garlic, pressed 1/2 tsp thyme 4 slices sprouted grain bread 1 T extra virgin olive oilInstructions Cook onion, and celery in a bit of water until tender. Stir together bread and spaghetti sauce. Drain cooked lentils (save liquid for soup)and add rest of ingredients. Mix well. Bake at 350 degrees for 45 minutes. Top with ketchup or gravy. Serve with mashed potatoes and veggies.
