Matthew's Granola Bars

E-Mail This Recipe

This is a delicious, healthy, all-raw recipe! These granola bars are a great substitute for candy bars and other deserts. They also make great energy boosters or quick breakfasts. Makes about 60 bars.

Ingredients
2 cups raw almonds (soaked for at least 6 hours)
3 bananas
1.5 cups water
1.5 t. cinnamon

Blend these first ingredients together with a blender and dump into a large mixing bowl. It works best to blend 1/3 or less of the ingredients together at one time.

Mix in the following ingredients
2 c dried fruit (Example: 1 cup raisons, 1/2 cup chopped dried apples, and 1/2 cup chopped dried persimmons.)
1/2 cup chopped walnuts (optional)
1/2 cup chopped or ground flax seeds
1/2 cup whole wheat flour
4-5 cups rolled oats

Form dough into 1/2 inch thick bars and dehydrate at 105 degrees over night.

This is a very flexible recipe, so feel free to play with it. The bananas can be replaced with apple sauce or 1/2 cup honey, and the combinations of dried fruits are endless. Have fun!
